As an avid reader of many different blogs, I really appreciate it when bloggers share some of their favorite content from the web. I have seen this on many blogs as a "Loving Lately" post or "Weekend Favorites," etc. I am going to start posting a Weekly Round Up on Fridays to tell you guys about different articles, podcasts, recipes, books, or other resources that I have found to be interesting, inspiring, or informational. Good Eats

Right now I am loving all things zucchini!! This versatile vegetable is a wonderful low carb alternative for us TD1s, but your friends and family will enjoy these dishes, too! Check out these recipes and let me know if you have a favorite way to incorporate zucchini into your menu!

I plan on whipping up this dessert this weekend! I am a huge fan of the Minimalist Baker because she always creates simple, quick recipes with whole food ingredients, AND, as an added bonus- she analyzes the nutrition information. While I try not to worry so much about counting calories, I find this info incredibly helpful for counting carbs and calculating the correct insulin dose. Try this recipe or explore their site for many other delicious ideas!
